Hummingbird Bread

  1. Ingredients:
    • 3 ripe bananas, mashed
    • 1 cup crushed pineapple, drained
    • 1/2 cup unsweetened applesauce
    • 1/2 cup vegetable oil
    • 2 cups all-purpose flour
    • 1 cup granulated sugar
    • 1/2 cup packed brown sugar
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/2 cup chopped pecans
    • 1 teaspoon vanilla extract

    Directions:

    1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
    2. In a large bowl, combine the mashed bananas, crushed pineapple, applesauce, and vegetable oil.
    3. In another bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, and nutmeg.
    4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    5. Fold in the chopped pecans and vanilla extract.
    6. Pour the batter into the prepared loaf pan and spread it evenly.
    7. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
    8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
