Ingredients
- 1 1/2 cups flour
- 1 cup granulated sugar
- 3/4 cup of oil
- 2 mashed spotted bananas
- 2 beaten eggs
- ½ cup canned pineapple chunks, undrained
- 1/2 cup chopped American walnuts
- 1/4 cup raisins
- 1/2 tablespoon of vanilla extract
- 1 teaspoon of baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
Preparation
Set the oven to 350°F and use flour to grease a 9″ x 5″ baking pan.
Whisk the flour, baking soda, salt, sugar, and cinnamon together in a medium bowl.
Stir the eggs and oil into the mixture.
Add the vanilla, pineapple, banana, walnuts, and raisins. Pour the mixture into the pan that has been prepared.
Put the pan in the oven and bake for about an hour, or until a toothpick stuck in the middle comes out clean.
(But just to be safe, check after 45 minutes.)
Put a piece of aluminum foil on top of the cake if it’s getting too brown too quickly.
Let the cake cool for 20 minutes in the pan before taking it out and letting it cool completely.
