Ingredients:
- 5 cups all-purpose flour
- 1/4 cup sugar
- 3 tablespoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup shortening, cold
- 1/2 cup unsalted butter, cold and cubed
- 2 cups buttermilk, chilled
- 1 package active dry yeast (2 1/4 teaspoons)
- 1/4 cup warm water (105°F to 110°F)
- 2 tablespoons honey
Directions:
- In a small bowl, dissolve the yeast and honey in warm water. Let it sit for 5 minutes until frothy.
- In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt.
- Cut in the shortening and butter with a pastry blender or two knives until the mixture resembles coarse crumbs.
- Make a well in the center of the flour mixture and pour in the buttermilk and yeast mixture. Stir gently until the dough comes together.
- Turn the dough out onto a floured surface and knead lightly for about 3 minutes.
- Roll the dough to about 1/2 inch thick and cut with a biscuit cutter.
- Place the biscuits on a baking sheet lined with parchment paper, slightly touching each other.
- Cover with a clean kitchen towel and let rise in a warm place for 30 minutes.
- Preheat the oven to 400°F (200°C).
- Bake the biscuits for 15-20 minutes or until golden brown on top.
