Heavenly Fluffy Southern-Style Angel Biscuits

Ingredients:

  • 5 cups all-purpose flour
  • 1/4 cup sugar
  • 3 tablespoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup shortening, cold
  • 1/2 cup unsalted butter, cold and cubed
  • 2 cups buttermilk, chilled
  • 1 package active dry yeast (2 1/4 teaspoons)
  • 1/4 cup warm water (105°F to 110°F)
  • 2 tablespoons honey

Directions:

  1. In a small bowl, dissolve the yeast and honey in warm water. Let it sit for 5 minutes until frothy.
  2. In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt.
  3. Cut in the shortening and butter with a pastry blender or two knives until the mixture resembles coarse crumbs.
  4. Make a well in the center of the flour mixture and pour in the buttermilk and yeast mixture. Stir gently until the dough comes together.
  5. Turn the dough out onto a floured surface and knead lightly for about 3 minutes.
  6. Roll the dough to about 1/2 inch thick and cut with a biscuit cutter.
  7. Place the biscuits on a baking sheet lined with parchment paper, slightly touching each other.
  8. Cover with a clean kitchen towel and let rise in a warm place for 30 minutes.
  9. Preheat the oven to 400°F (200°C).
  10. Bake the biscuits for 15-20 minutes or until golden brown on top.
