Garlic Parmesan Chicken Skewers

  1. Ingredients:
    • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
    • 1/4 cup olive oil
    • 3 cloves garlic, minced
    • 1/2 cup grated Parmesan cheese
    • 1 tablespoon dried Italian seasoning
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 tablespoon fresh parsley, chopped
    • Wooden skewers, soaked in water for 30 minutes
    Directions:
    1. In a large bowl, combine the olive oil, minced garlic, grated Parmesan cheese, Italian seasoning, salt, and black pepper.
    2. Add the chicken cubes to the bowl and toss to coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
    3. Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the soaked wooden skewers.
    4. Grill the chicken skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
    5. Remove the skewers from the grill and sprinkle with fresh parsley before serving.
