- Ingredients:
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tablespoon dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- Wooden skewers, soaked in water for 30 minutes
Directions:
- In a large bowl, combine the olive oil, minced garlic, grated Parmesan cheese, Italian seasoning, salt, and black pepper.
- Add the chicken cubes to the bowl and toss to coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the soaked wooden skewers.
- Grill the chicken skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- Remove the skewers from the grill and sprinkle with fresh parsley before serving.
