Ingredients:
- 4 boneless, skinless chicken breasts
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 cup broccoli florets
- 1 cup fresh spinach
- 1/2 cup chicken broth
- 1 tablespoon lemon juice
- Optional: grated Parmesan cheese for garnish
Directions:
- Season the chicken breasts with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the chicken breasts to the skillet and cook for about 5 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the broccoli florets and sauté for 3 minutes.
- Add spinach and chicken broth to the skillet. Cook until the spinach is wilted and the broccoli is tender, about 4 minutes.
- Return the chicken to the skillet, squeeze lemon juice over the top, and heat through.
- Serve hot, garnished with grated Parmesan if desired.
