Garlic Chicken with Broccoli and Spinach


  • 4 boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 cup broccoli florets
  • 1 cup fresh spinach
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • Optional: grated Parmesan cheese for garnish


  1. Season the chicken breasts with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chicken breasts to the skillet and cook for about 5 minutes on each side, or until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the broccoli florets and sauté for 3 minutes.
  6. Add spinach and chicken broth to the skillet. Cook until the spinach is wilted and the broccoli is tender, about 4 minutes.
  7. Return the chicken to the skillet, squeeze lemon juice over the top, and heat through.
  8. Serve hot, garnished with grated Parmesan if desired.
