Fresh Southern Peach Cobbler

Ingredients:

  • 8 cups fresh peaches, peeled and sliced
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 teaspoons lemon juice
  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • Vanilla ice cream for serving (optional)

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced peaches, 1 cup granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well and let sit for 10 minutes.
  3. Pour the peach mixture into a 9×13-inch baking dish.
  4. In another bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt. Stir in the milk until just combined, then pour in the melted butter and mix until smooth.
  5. Pour the batter evenly over the peach mixture in the baking dish.
  6. Bake for 45-50 minutes, or until the top is golden brown and the filling is bubbly.
  7. Allow the cobbler to cool slightly before serving. Serve warm with a scoop of vanilla ice cream if desired.
