Ingredients:
- 4 lobster tails
- 1/2 cup unsalted butter, melted
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes
- Salt and black pepper to taste
- Lemon wedges for serving
Directions:
- Preheat your grill to medium-high heat.
- Using kitchen shears, carefully cut the top shell of each lobster tail down the center to the tail fin. Gently pull the lobster meat out of the shell, keeping it attached at the end.
- In a small bowl, combine melted butter, minced garlic, Dijon mustard, lemon juice, parsley, smoked paprika, red pepper flakes, salt, and black pepper.
- Brush the lobster meat generously with the cowboy butter mixture.
- Place the lobster tails meat-side up on the preheated grill. Grill for 5-7 minutes, basting occasionally with the butter mixture, until the lobster meat is opaque and cooked through.
- Serve immediately with lemon wedges on the side.
