Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups sliced mushrooms
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup butter, melted
- Salt and pepper to taste
Directions:
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat. Add the mushrooms and garlic, sautéing until the mushrooms are tender and the garlic is fragrant, about 5 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked mushrooms, mozzarella cheese, Parmesan cheese, and chopped parsley.
- Using a sharp knife, make a pocket in each chicken breast by cutting horizontally through the thickest part. Be careful not to cut all the way through.
- Stuff each chicken breast with the mushroom and cheese mixture, then secure the edges with toothpicks to keep the filling inside.
- Place the stuffed chicken breasts in a baking dish. Brush with melted butter and season with salt and pepper.
- Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Remove the toothpicks before serving.
