Cheesy Garlic Butter Mushroom Stuffed Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups sliced mushrooms
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup butter, melted
  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the mushrooms and garlic, sautéing until the mushrooms are tender and the garlic is fragrant, about 5 minutes. Remove from heat and let cool slightly.
  3. In a mixing bowl, combine the cooked mushrooms, mozzarella cheese, Parmesan cheese, and chopped parsley.
  4. Using a sharp knife, make a pocket in each chicken breast by cutting horizontally through the thickest part. Be careful not to cut all the way through.
  5. Stuff each chicken breast with the mushroom and cheese mixture, then secure the edges with toothpicks to keep the filling inside.
  6. Place the stuffed chicken breasts in a baking dish. Brush with melted butter and season with salt and pepper.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Remove the toothpicks before serving.
