  1. Ingredients:
    • 1 pound carrots, peeled and trimmed
    • 3 tablespoons butter, melted
    • 2 tablespoons honey
    • 2 cloves garlic, minced
    • Salt and freshly ground black pepper, to taste
    • Optional: Fresh parsley, chopped for garnish

    Directions:

    1. Preheat your oven to 400°F (200°C).
    2. In a small bowl, mix together the melted butter, honey, and minced garlic.
    3. Place the carrots in a single layer on a baking sheet.
    4. Pour the honey garlic butter mixture over the carrots, tossing to ensure they are well coated.

    6. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, turning once halfway through.
