Balsamic Soy Roasted Garlic Mushrooms

  1. Ingredients:
  • 1 lb button mushrooms, cleaned and stems trimmed
  • 1/4 cup balsamic vinegar
  • 1/4 cup soy sauce
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Freshly ground black pepper to taste

Directions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together balsamic vinegar, soy sauce, olive oil, minced garlic, thyme, and black pepper.
  3. Add the mushrooms to the bowl and toss until they are fully coated in the marinade.
  4. Spread the mushrooms in a single layer on a baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the mushrooms are tender and the sauce has thickened.
  6. Serve warm as a side dish or a topping for grilled meats.
