- Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 cup finely chopped pineapple
- Oil for frying
- Powdered sugar for dusting
Directions:
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- Stir in the milk, beaten egg, and vanilla extract until the batter is smooth.
- Fold in the chopped pineapple.
- Heat oil in a deep fryer or large saucepan to 375°F (190°C).
- Drop spoonfuls of the batter into the hot oil, and fry for 2-3 minutes or until golden brown and cooked through.
- Remove the fritters with a slotted spoon and drain on paper towels.
- Dust with powdered sugar before serving.
