Ingredients:
- 4 cups rhubarb, cut into 1-inch pieces
- 1 cup granulated sugar
- 1/2 cup water
- Juice and zest of one lemon
Directions:
- In a large saucepan, combine the rhubarb, sugar, water, lemon juice, and half of the lemon zest.
- Bring the mixture to a simmer over medium heat, stirring occasionally.
- Reduce the heat to low and continue to cook, stirring occasionally, until the rhubarb is tender and the mixture has thickened, about 10-15 minutes.
- Remove from heat and stir in the remaining lemon zest.
- Serve warm or allow to cool and refrigerate. Can be served alone, with yogurt, or as a topping for desserts.
