Sweet and Tangy Stewed Rhubarb


  • 4 cups rhubarb, cut into 1-inch pieces
  • 1 cup granulated sugar
  • 1/2 cup water
  • Juice and zest of one lemon


  1. In a large saucepan, combine the rhubarb, sugar, water, lemon juice, and half of the lemon zest.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally.
  3. Reduce the heat to low and continue to cook, stirring occasionally, until the rhubarb is tender and the mixture has thickened, about 10-15 minutes.
  4. Remove from heat and stir in the remaining lemon zest.
  5. Serve warm or allow to cool and refrigerate. Can be served alone, with yogurt, or as a topping for desserts.
