Rhubarb Sauce


  • 4 cups rhubarb, chopped
  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • Zest of 1 orange (optional for added flavor)


  1. Combine rhubarb, sugar, and water in a medium saucepan over medium heat.
  2. Stir until the sugar dissolves and the mixture begins to boil.
  3. Lower the heat and simmer for 10-15 minutes, until the rhubarb is soft and the sauce has thickened.
  4. Remove from heat and stir in vanilla extract and orange zest if using.
  5. Let the sauce cool slightly before serving, or store in the refrigerator in an airtight container.
