Sticky Jamaican Ginger Cake

  1. Ingredients:
    • 1 cup all-purpose flour
    • 1 teaspoon baking powder
    • 1 teaspoon ground ginger
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/4 teaspoon ground cloves
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter
    • 1/2 cup brown sugar
    • 1/2 cup molasses
    • 1/2 cup whole milk
    • 1/4 cup golden syrup
    • 1 large egg
    • 2 tablespoons finely grated fresh ginger
    • 1 tablespoon lemon juice

    Directions:

    1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking dish with parchment paper.
    2. In a medium bowl, whisk together the flour, baking powder, ground ginger, cinnamon, nutmeg, cloves, and salt.
    3. In a small saucepan, melt the butter over low heat. Stir in the brown sugar, molasses, milk, and golden syrup until smooth and combined. Remove from heat and let cool slightly.
    4. In a large bowl, beat the egg and add the grated fresh ginger and lemon juice. Pour in the cooled molasses mixture and mix well.
    5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    6. Pour the batter into the prepared baking dish and spread it evenly.
    7. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
    8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
