- Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves

- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/2 cup molasses
- 1/2 cup whole milk
- 1/4 cup golden syrup
- 1 large egg
- 2 tablespoons finely grated fresh ginger
- 1 tablespoon lemon juice
Directions:
- Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking dish with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, ground ginger, cinnamon, nutmeg, cloves, and salt.
- In a small saucepan, melt the butter over low heat. Stir in the brown sugar, molasses, milk, and golden syrup until smooth and combined. Remove from heat and let cool slightly.
- In a large bowl, beat the egg and add the grated fresh ginger and lemon juice. Pour in the cooled molasses mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
