- 1 lb ground beef or pork sausage
- 1/2 lb chicken livers, finely chopped (optional)
- 1 large onion, finely chopped
- 1 green bell pepper, finely chopped
- 2 celery stalks, finely chopped
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional for heat)
- Salt and black pepper to taste
- 2 green onions, chopped for garnish
- Fresh parsley, chopped for garnish
Directions:
- In a large skillet, cook the ground beef or pork sausage over medium heat until browned. If using, add the finely chopped chicken livers and cook until no longer pink. Drain any excess fat.
- Add the chopped onion, green bell pepper, and celery to the skillet. Sauté until the vegetables are tender, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the uncooked rice to the skillet and stir to combine with the meat and vegetables.
- Pour in the chicken broth and add the Cajun seasoning, dried thyme, smoked paprika, cayenne pepper (if using), salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and garnish with chopped green onions and fresh parsley before serving.
