Southern Fried Cornbread

Ingredients:

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons sugar (optional)
  • 1/4 cup melted butter or bacon grease
  • Vegetable oil for frying

Directions:

  1. In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
  2. In another bowl, whisk together buttermilk, egg, and sugar (if using). Add the melted butter or bacon grease and mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
  5. Drop spoonfuls of batter into the hot oil, flattening them slightly with the back of a spoon.
  6. Fry until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove the cornbread from the skillet and drain on paper towels.
  7. Serve hot with butter, honey, or your favorite southern meal.
