Ingredients:
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons sugar (optional)
- 1/4 cup melted butter or bacon grease
- Vegetable oil for frying
Directions:
- In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, egg, and sugar (if using). Add the melted butter or bacon grease and mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
- Drop spoonfuls of batter into the hot oil, flattening them slightly with the back of a spoon.
- Fry until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove the cornbread from the skillet and drain on paper towels.
- Serve hot with butter, honey, or your favorite southern meal.
