Root Beer Float Pie


  • 1 graham cracker crust (9-inch)
  • 2 cups root beer
  • 1/2 cup milk
  • 2 tablespoons cornstarch
  • 1/4 cup sugar
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream, whipped
  • Maraschino cherries for garnish (optional)


  1. In a saucepan, whisk together root beer, milk, cornstarch, and sugar.
  2. Bring the mixture to a boil over medium heat, stirring constantly. Continue to cook and stir until thickened, about 5 minutes.
  3. Remove from heat and stir in vanilla extract. Allow the mixture to cool completely.
  4. Once cooled, fold in the whipped cream until well combined.
  5. Pour the filling into the graham cracker crust and smooth the top with a spatula.
  6. Refrigerate for at least 4 hours, or until set.
  7. Garnish with maraschino cherries before serving, if desired.
