Old Bay Shrimp Rolls

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Old Bay seasoning
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 celery stalk, finely chopped
  • 1/4 cup green onions, finely chopped
  • 4 brioche rolls or hot dog buns
  • 2 tablespoons butter, melted
  • Lettuce leaves for garnish
  • Salt and pepper to taste

Directions:

  1. Preheat a grill or skillet over medium-high heat.
  2. In a bowl, toss the shrimp with olive oil and Old Bay seasoning until evenly coated.
  3. Grill or sauté the shrimp for 2-3 minutes on each side, until they are pink and opaque. Remove from heat and let cool slightly.
  4. In a large bowl, combine mayonnaise, lemon juice, Dijon mustard, celery, and green onions. Mix well.
  5. Chop the cooked shrimp into bite-sized pieces and fold into the mayonnaise mixture. Season with salt and pepper to taste.
  6. Brush the brioche rolls with melted butter and toast on the grill or skillet until golden brown.
  7. Fill each roll with a lettuce leaf and a generous portion of the shrimp mixture.
  8. Serve immediately, with extra lemon wedges on the side if desired.
