Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tablespoons Old Bay seasoning
- 2 tablespoons olive oil
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 celery stalk, finely chopped
- 1/4 cup green onions, finely chopped
- 4 brioche rolls or hot dog buns
- 2 tablespoons butter, melted
- Lettuce leaves for garnish
- Salt and pepper to taste
Directions:
- Preheat a grill or skillet over medium-high heat.
- In a bowl, toss the shrimp with olive oil and Old Bay seasoning until evenly coated.
- Grill or sauté the shrimp for 2-3 minutes on each side, until they are pink and opaque. Remove from heat and let cool slightly.
- In a large bowl, combine mayonnaise, lemon juice, Dijon mustard, celery, and green onions. Mix well.
- Chop the cooked shrimp into bite-sized pieces and fold into the mayonnaise mixture. Season with salt and pepper to taste.
- Brush the brioche rolls with melted butter and toast on the grill or skillet until golden brown.
- Fill each roll with a lettuce leaf and a generous portion of the shrimp mixture.
- Serve immediately, with extra lemon wedges on the side if desired.
