Ingredients:
- 2 tablespoons olive oil
- 1 lb mushrooms, sliced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped (for garnish)
Directions:
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium-high heat. Add sliced mushrooms and cook for 5-7 minutes until they release their moisture and start to brown.
- Add chopped onion and cook for another 3-4 minutes until softened.
- Stir in minced garlic, salt, pepper, thyme, and oregano. Cook for 1-2 minutes until fragrant.
- Add marinara sauce and stir to combine. Cook for 2-3 minutes until heated through.
- Transfer the mushroom mixture to a greased 9×13 inch baking dish.
- Sprinkle shredded mozzarella cheese evenly over the top, followed by grated Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
- Garnish with chopped fresh parsley before serving.
