Mushroom Mozzarella Bake

Ingredients:

  • 2 tablespoons olive oil
  • 1 lb mushrooms, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add sliced mushrooms and cook for 5-7 minutes until they release their moisture and start to brown.
  3. Add chopped onion and cook for another 3-4 minutes until softened.
  4. Stir in minced garlic, salt, pepper, thyme, and oregano. Cook for 1-2 minutes until fragrant.
  5. Add marinara sauce and stir to combine. Cook for 2-3 minutes until heated through.
  6. Transfer the mushroom mixture to a greased 9×13 inch baking dish.
  7. Sprinkle shredded mozzarella cheese evenly over the top, followed by grated Parmesan cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  9. Garnish with chopped fresh parsley before serving.
