Honey Pineapple Grilled Chicken


  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • Fresh pineapple slices, for garnish


  1. In a bowl, whisk together pineapple juice, honey, soy sauce, olive oil, garlic powder, ginger, salt, and pepper.
  2. Place chicken breasts in a large resealable plastic bag or shallow dish.
  3. Pour the marinade over the chicken, ensuring each piece is well coated.
  4. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight, to marinate.
  5. Preheat the grill to medium-high heat.
  6. Remove chicken from the marinade and grill for 6-7 minutes per side or until the chicken is thoroughly cooked and has nice grill marks.
  7. During the last few minutes of grilling, place pineapple slices on the grill, cooking until they are warm and slightly charred.
  8. Serve the chicken topped with grilled pineapple slices.
