Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- Fresh pineapple slices, for garnish
Directions:
- In a bowl, whisk together pineapple juice, honey, soy sauce, olive oil, garlic powder, ginger, salt, and pepper.
- Place chicken breasts in a large resealable plastic bag or shallow dish.
- Pour the marinade over the chicken, ensuring each piece is well coated.
- Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight, to marinate.
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade and grill for 6-7 minutes per side or until the chicken is thoroughly cooked and has nice grill marks.
- During the last few minutes of grilling, place pineapple slices on the grill, cooking until they are warm and slightly charred.
- Serve the chicken topped with grilled pineapple slices.
