Homemade Pimento Cheese

Ingredients:

  • 2 cups sharp cheddar cheese, grated
  • 1 cup Monterey Jack cheese, grated
  • 1 (4 oz) jar pimentos, drained and chopped
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste

Directions:

  1. In a medium mixing bowl, combine the grated cheddar and Monterey Jack cheese.
  2. Add the chopped pimentos, mayonnaise, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. Stir the mixture until all ingredients are well blended and the cheese is evenly coated with mayonnaise and spices.
  4. Taste and adjust seasonings as needed.
  5. Refrigerate the pimento cheese for at least an hour before serving to allow the flavors to meld together.
  6. Serve with crackers, on sandwiches, or as a dip for vegetables.
