Ingredients:
- 2 cups sharp cheddar cheese, grated
- 1 cup Monterey Jack cheese, grated
- 1 (4 oz) jar pimentos, drained and chopped
- 1/2 cup mayonnaise
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
Directions:
- In a medium mixing bowl, combine the grated cheddar and Monterey Jack cheese.
- Add the chopped pimentos, mayonnaise, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Stir the mixture until all ingredients are well blended and the cheese is evenly coated with mayonnaise and spices.
- Taste and adjust seasonings as needed.
- Refrigerate the pimento cheese for at least an hour before serving to allow the flavors to meld together.
- Serve with crackers, on sandwiches, or as a dip for vegetables.
