- 6 cups sliced and peeled apples (about 5-6 medium apples)

- 1/2 cup brown sugar
- 1/4 cup cornstarch
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/8 teaspoon salt
- 2 cups water
- 1 teaspoon vanilla extract
Directions:
- In a large bowl, toss the sliced apples with lemon juice to prevent browning. Set aside.
- In a large saucepan, combine the granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, cloves, and salt. Add water and stir until well mixed.
- Cook the mixture over medium heat, stirring constantly, until it begins to boil and thickens. This should take about 5-7 minutes.
- Add the apples to the saucepan and stir to coat them with the thickened mixture. Reduce the heat to low and cook for an additional 8-10 minutes, or until the apples are tender.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Allow the apple pie filling to cool completely before using it in your favorite pie recipe or storing it in an airtight container in the refrigerator for up to a week.
