Homemade Apple Pie Filling

Ingredients:

  • 6 cups sliced and peeled apples (about 5-6 medium apples)
  • 1 tablespoon lemon juice
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon salt
  • 2 cups water
  • 1 teaspoon vanilla extract

Directions:

  1. In a large bowl, toss the sliced apples with lemon juice to prevent browning. Set aside.
  2. In a large saucepan, combine the granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, cloves, and salt. Add water and stir until well mixed.
  3. Cook the mixture over medium heat, stirring constantly, until it begins to boil and thickens. This should take about 5-7 minutes.
  4. Add the apples to the saucepan and stir to coat them with the thickened mixture. Reduce the heat to low and cook for an additional 8-10 minutes, or until the apples are tender.
  5. Remove the saucepan from the heat and stir in the vanilla extract.
  6. Allow the apple pie filling to cool completely before using it in your favorite pie recipe or storing it in an airtight container in the refrigerator for up to a week.
