Friendship Casserole


  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 jar (24 oz) pasta sauce
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lb rotini pasta, cooked and drained
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup ricotta cheese
  • Fresh parsley, chopped for garnish


  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, cook the ground beef, chopped onion, and minced garlic over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
  3. Stir in the pasta sauce, diced tomatoes, Italian seasoning, salt, and black pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  4. In a large bowl, combine the cooked rotini pasta with the meat sauce. Stir in 1 cup of shredded mozzarella cheese and the ricotta cheese until well combined.
  5. Pour the pasta mixture into the prepared baking dish. Sprinkle the top with the remaining mozzarella cheese and the grated Parmesan cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped fresh parsley before serving.
