Fresh Avocado Tomato Bruschetta


  • 1 baguette, sliced into 1/2 inch pieces
  • 2 ripe avocados, diced
  • 2 cups cherry tomatoes, quartered
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and black pepper to taste
  • Balsamic glaze for drizzling (optional)


  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil. Toast in the oven for 8-10 minutes, or until golden brown.
  2. In a medium bowl, combine diced avocados, cherry tomatoes, red onion, garlic, and basil. Drizzle with olive oil and balsamic vinegar, then season with salt and black pepper. Gently toss to combine.
  3. Spoon the avocado tomato mixture onto the toasted baguette slices.
  4. Drizzle with balsamic glaze if desired and serve immediately.
