Fresh Apple Cake

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups peeled and finely chopped apples (about 4 medium apples)
  • 1 cup chopped walnuts (optional)
  • Powdered sugar for dusting (optional)

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the chopped apples and walnuts (if using) until evenly distributed.
  6. Pour the batter into the prepared baking dish and spread it out evenly.
  7. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan on a wire rack. Dust with powdered sugar before serving, if desired.
