Easy Crockpot Lasagna

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 24 oz jar of marinara sauce
  • 1 cup water
  • 15 oz ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 egg
  • 2 tablespoons fresh parsley, chopped
  • 9 lasagna noodles, uncooked
  • Salt and pepper to taste

Directions:

  1. In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned. Drain any excess fat.
  2. Stir in the marinara sauce and water, and bring to a simmer. Remove from heat.
  3. In a bowl, mix together ricotta cheese, Parmesan cheese, 1 cup of mozzarella, egg, parsley, salt, and pepper.
  4. Spoon a layer of the meat sauce into the bottom of the crockpot.
  5. Place a layer of uncooked lasagna noodles over the sauce (break them to fit).
  6. Spread a layer of the cheese mixture over the noodles.
  7. Repeat the layering process until all ingredients are used, finishing with a layer of meat sauce.
  8. Top with the remaining mozzarella cheese.
  9. Cover and cook on low for 4-6 hours, until noodles are tender.
  10. Let the lasagna sit for 10 minutes after cooking before serving to set the layers.
