Crockpot Bacon Cheese Potatoes

Ingredients:

  • 6 medium potatoes, thinly sliced
  • 1 small onion, finely chopped
  • 8 slices bacon, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Directions:

  1. In a large bowl, combine the sour cream, cream of mushroom soup, garlic powder, onion powder, salt, and black pepper. Mix well.
  2. Lightly grease the inside of your crockpot with cooking spray.
  3. Layer half of the sliced potatoes in the bottom of the crockpot. Top with half of the chopped onion, half of the crumbled bacon, and half of the shredded cheddar cheese.
  4. Pour half of the sour cream mixture over the potato layer and spread evenly.
  5. Repeat the layers with the remaining potatoes, onion, bacon, and cheddar cheese. Pour the remaining sour cream mixture on top.
  6. Cover and cook on low for 6-7 hours, or until the potatoes are tender.
  7. Garnish with chopped fresh parsley before serving.
