Chicken Cordon Bleu Meatloaf

  • 1 1/2 lbs ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg, beaten
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 slices ham, thinly sliced
  • 4 slices Swiss cheese
  • 1/4 cup Dijon mustard
  • 1/4 cup fresh parsley, chopped (for garnish)

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together ground chicken, breadcrumbs, milk, egg, onion, garlic, salt, and pepper.
  3. Press half of the meat mixture into the bottom of a greased loaf pan.
  4. Layer the slices of ham and Swiss cheese on top of the meat mixture, leaving a small margin at the edges to prevent leaking.
  5. Spread the Dijon mustard over the cheese.
  6. Cover with the remaining meat mixture, sealing the edges to enclose the filling.
  7. Bake in the preheated oven for about 55 minutes, or until the meatloaf is cooked through and the internal temperature reaches 165°F (74°C).
  8. Let rest for 10 minutes before slicing. Garnish with chopped parsley before serving.
