Cheesy Potato Burritos

  1. Ingredients:
    • 4 large flour tortillas
    • 2 cups mashed potatoes
    • 1 cup shredded cheddar cheese
    • 1/2 cup cooked bacon bits
    • 1/4 cup chopped green onions
    • 1/2 teaspoon paprika
    • 1/4 teaspoon garlic powder
    • Salt and pepper to taste
    • Sour cream, for serving
    • Salsa, for serving


    1. Lay out the flour tortillas on a flat surface.
    2. Spread an even layer of mashed potatoes on each tortilla, leaving a small border around the edges.
    3. Sprinkle the shredded cheddar cheese, bacon bits, and green onions over the mashed potatoes. Season with paprika, garlic powder, salt, and pepper.
    4. Roll up the tortillas tightly to enclose the filling.
    5. Heat a non-stick skillet over medium heat. Place the burritos seam-side down and cook for 2-3 minutes on each side until golden brown and the cheese has melted.
    6. Serve hot with sour cream and salsa on the side.
