Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup unsalted butter, melted
- 4 eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 1 cup mixed nuts (pecans, walnuts, almonds), chopped
- 1/2 cup shredded coconut
- 1/2 cup raisins
- 1/2 cup rum (optional)
Directions:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Stir in melted butter, eggs, vanilla extract, and milk until well combined.
- Fold in chopped nuts, shredded coconut, and raisins. If using, stir in rum.
- Pour the batter into the prepared cake pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
