Caribbean Nut Cake

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup unsalted butter, melted
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 cup mixed nuts (pecans, walnuts, almonds), chopped
  • 1/2 cup shredded coconut
  • 1/2 cup raisins
  • 1/2 cup rum (optional)

Directions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Stir in melted butter, eggs, vanilla extract, and milk until well combined.
  4. Fold in chopped nuts, shredded coconut, and raisins. If using, stir in rum.
  5. Pour the batter into the prepared cake pan.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
