- Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 small head of cabbage, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 4 cups beef broth
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup uncooked rice
- 2 tablespoons fresh parsley, chopped
Directions:
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
- Add the chopped onion and minced garlic to the pot and cook until the onion is translucent.
- Stir in the chopped cabbage, carrots, and celery. Cook for about 5 minutes until the vegetables begin to soften.
- Add the diced tomatoes, tomato sauce, beef broth, paprika, thyme, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat and simmer for about 20 minutes. Add the uncooked rice and continue to simmer for an additional 20 minutes until the rice is tender.
- Garnish with fresh parsley before serving.
