Cabbage Roll Soup

  1. Ingredients:
  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 small head of cabbage, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup uncooked rice
  • 2 tablespoons fresh parsley, chopped

Directions:

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the pot and cook until the onion is translucent.
  3. Stir in the chopped cabbage, carrots, and celery. Cook for about 5 minutes until the vegetables begin to soften.
  4. Add the diced tomatoes, tomato sauce, beef broth, paprika, thyme, salt, and black pepper. Bring the mixture to a boil.
  5. Reduce the heat and simmer for about 20 minutes. Add the uncooked rice and continue to simmer for an additional 20 minutes until the rice is tender.
  6. Garnish with fresh parsley before serving.
