Unstuffed Cabbage Roll Casserole

  1. Ingredients:
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 small head cabbage, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1/2 cup water
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1/2 cup shredded cheddar cheese

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Add onion and garlic, and cook until onions are translucent.
  3. Stir in the chopped cabbage, diced tomatoes, tomato sauce, water, paprika, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes, until cabbage is tender.
  4. Mix in the cooked rice and transfer the mixture to a greased 9×13 inch baking dish.
  5. Sprinkle shredded cheddar cheese over the top.
  6. Bake in the preheated oven for 20-25 minutes until the casserole is bubbly and the cheese is melted.
