Black Bean Taco Salad

  1. Ingredients:
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 cup cherry tomatoes, halved
    • 1 cup corn kernels (fresh, canned, or frozen)
    • 1 red bell pepper, diced
    • 1 avocado, diced
    • 1/4 red onion, finely chopped
    • 1/2 cup shredded cheddar cheese
    • 1/4 cup chopped fresh cilantro
    • 1/4 cup sour cream
    • 1/4 cup salsa
    • Juice of 1 lime
    • Salt and pepper to taste
    • Tortilla chips, crushed (for topping)
    • Optional: sliced jalapeƱos, for extra heat
    Directions:
    1. In a large bowl, combine the black beans, cherry tomatoes, corn, red bell pepper, avocado, red onion, and cheddar cheese.
    2. In a small bowl, mix together the sour cream, salsa, lime juice, salt, and pepper to make the dressing.
    3. Pour the dressing over the salad and toss gently to combine.
    4. Sprinkle with chopped fresh cilantro and crushed tortilla chips before serving.
    5. Add sliced jalapeƱos if you like extra heat.
