Banana Cake with Cream Cheese Frosting

Ingredients:

For the Banana Cake:

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions:

Banana Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Alternately add the dry ingredients and buttermilk to the creamed mixture, starting and ending with the dry ingredients. Fold in the mashed bananas.
  5. Pour batter into the prepared pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely.

Cream Cheese Frosting:

  1. In a large bowl, beat together the cream cheese and butter until smooth.
  2. Gradually add the powdered sugar, mixing until smooth and creamy. Stir in vanilla extract.
  3. Spread frosting over the cooled cake.
