Ingredients:
For the Banana Cake:
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Directions:
Banana Cake:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Alternately add the dry ingredients and buttermilk to the creamed mixture, starting and ending with the dry ingredients. Fold in the mashed bananas.
- Pour batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely.
Cream Cheese Frosting:
- In a large bowl, beat together the cream cheese and butter until smooth.
- Gradually add the powdered sugar, mixing until smooth and creamy. Stir in vanilla extract.
- Spread frosting over the cooled cake.
