Banana Bars with Cream Cheese Frosting

Ingredients:

  • For the Banana Bars:
    • 1/2 cup butter, softened
    • 1 and 1/2 cups sugar
    • 2 eggs
    • 1 cup sour cream
    • 1 teaspoon vanilla extract
    • 2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 cup mashed ripe bananas (about 2 large bananas)
  • For the Cream Cheese Frosting:
    • 8 oz cream cheese, softened
    • 1/2 cup butter, softened
    • 2 teaspoons vanilla extract
    • 3 and 1/2 cups powdered sugar

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 15×10 inch baking pan.
  2. In a large bowl, cream together 1/2 cup butter and sugar until light and fluffy. Beat in the eggs, sour cream, and 1 teaspoon vanilla extract. Mix in the mashed bananas.
  3. Combine the flour, baking soda, and salt; gradually add to the banana mixture and mix well. Spread evenly into the prepared pan.
  4. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.
  5. For the frosting, in a medium bowl, beat together the cream cheese, 1/2 cup butter, and 2 teaspoons vanilla extract. Gradually beat in the powdered sugar until smooth. Spread over cooled bars.
  6. Cut into squares and serve.
