Ingredients:
- For the Banana Bars:
- 1/2 cup butter, softened
- 1 and 1/2 cups sugar
- 2 eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup mashed ripe bananas (about 2 large bananas)
- For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 2 teaspoons vanilla extract
- 3 and 1/2 cups powdered sugar
Directions:
- Preheat your oven to 350°F (175°C). Grease and flour a 15×10 inch baking pan.
- In a large bowl, cream together 1/2 cup butter and sugar until light and fluffy. Beat in the eggs, sour cream, and 1 teaspoon vanilla extract. Mix in the mashed bananas.
- Combine the flour, baking soda, and salt; gradually add to the banana mixture and mix well. Spread evenly into the prepared pan.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.
- For the frosting, in a medium bowl, beat together the cream cheese, 1/2 cup butter, and 2 teaspoons vanilla extract. Gradually beat in the powdered sugar until smooth. Spread over cooled bars.
- Cut into squares and serve.
