Baked Chicken Chimichangas


  • 2 cups cooked chicken, shredded
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup refried beans
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 8 large flour tortillas
  • 2 tablespoons melted butter
  • Optional toppings: sour cream, guacamole, chopped tomatoes, chopped cilantro


  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine shredded chicken, salsa, shredded cheddar cheese, refried beans, cumin, chili powder, garlic powder, and onion powder. Mix until well combined.
  3. Place about 1/2 cup of the chicken mixture in the center of each tortilla.
  4. Fold in the sides of the tortilla and then roll it up from the bottom to form a burrito shape.
  5. Place the chimichangas seam-side down on the prepared baking sheet. Brush the tops with melted butter.
  6. Bake for 20-25 minutes, or until the chimichangas are golden brown and crispy.
  7. Serve hot with optional toppings such as sour cream, guacamole, chopped tomatoes, and chopped cilantro.
