Ingredients:
- 2 cups cooked chicken, shredded
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup refried beans
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 8 large flour tortillas
- 2 tablespoons melted butter
- Optional toppings: sour cream, guacamole, chopped tomatoes, chopped cilantro
Directions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine shredded chicken, salsa, shredded cheddar cheese, refried beans, cumin, chili powder, garlic powder, and onion powder. Mix until well combined.
- Place about 1/2 cup of the chicken mixture in the center of each tortilla.
- Fold in the sides of the tortilla and then roll it up from the bottom to form a burrito shape.
- Place the chimichangas seam-side down on the prepared baking sheet. Brush the tops with melted butter.
- Bake for 20-25 minutes, or until the chimichangas are golden brown and crispy.
- Serve hot with optional toppings such as sour cream, guacamole, chopped tomatoes, and chopped cilantro.
