Ingredients:
- 6 small flour tortillas
- 1 cup diced apples
- 1/2 cup cream cheese, softened
- 1/4 cup sour cream
- 1/3 cup sugar, plus 2 tablespoons for sprinkling
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 tablespoons butter, melted
- Optional toppings: caramel sauce, chopped nuts
Directions:
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the cream cheese, sour cream, 1/3 cup sugar, and vanilla extract until smooth.
- In another bowl, toss the diced apples with cinnamon and the remaining 2 tablespoons of sugar.
- Brush each tortilla lightly with melted butter, sprinkle with a little sugar, and mold into a taco shape using an inverted muffin tin as a guide.
- Bake the tortillas for 10-12 minutes or until crispy.
- Once cooled, fill each taco shell with the cream cheese mixture, top with the cinnamon apples, and drizzle with optional caramel sauce and chopped nuts.
