Apple Cheesecake Tacos

Ingredients:

  • 6 small flour tortillas
  • 1 cup diced apples
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/3 cup sugar, plus 2 tablespoons for sprinkling
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter, melted
  • Optional toppings: caramel sauce, chopped nuts

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the cream cheese, sour cream, 1/3 cup sugar, and vanilla extract until smooth.
  3. In another bowl, toss the diced apples with cinnamon and the remaining 2 tablespoons of sugar.
  4. Brush each tortilla lightly with melted butter, sprinkle with a little sugar, and mold into a taco shape using an inverted muffin tin as a guide.
  5. Bake the tortillas for 10-12 minutes or until crispy.
  6. Once cooled, fill each taco shell with the cream cheese mixture, top with the cinnamon apples, and drizzle with optional caramel sauce and chopped nuts.
