Yellow Squash Casserole

  1. Ingredients:
    • 4 cups sliced yellow squash
    • 1/2 cup chopped onion
    • 1/2 cup shredded carrot
    • 1 cup sour cream
    • 1 cup crushed crackers (like Ritz)
    • 1/2 cup melted butter
    • 1 egg, beaten
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon garlic powder
    • 1 cup shredded cheddar cheese

    Directions:

    1. Preheat your oven to 350°F (175°C).
    2. In a large skillet, sauté the squash, onion, and carrot in a bit of butter until they are soft, about 5-7 minutes.
    3. In a large mixing bowl, combine the sautéed vegetables with sour cream, crushed crackers, melted butter, beaten egg, salt, pepper, and garlic powder.
    4. Transfer the mixture to a greased 9×13 inch baking dish.
    5. Sprinkle the top with shredded cheddar cheese.
    6. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
    7. Let it cool slightly before serving.
