Watermelon Rind Candy

  1. Ingredients:
    • 4 cups watermelon rind, white part only, peeled and diced
    • 1 1/2 cups granulated sugar
    • 1 cup water
    • 1/2 teaspoon ground ginger
    • 1/4 teaspoon ground cloves
    • 1/2 teaspoon vanilla extract
    • Zest of one lemon
    • Optional: pinch of salt

    Directions:

    1. Prepare the watermelon rind by removing the outer green skin and any pink flesh. Cut the white part into small, uniform pieces.
    2. In a medium saucepan, combine sugar, water, ground ginger, ground cloves, and optional salt. Bring to a boil, stirring until the sugar dissolves.
    3. Add the diced watermelon rind and lemon zest to the boiling syrup. Reduce heat and simmer for about 45 minutes or until the rinds are translucent and tender.
    4. Remove from heat and stir in vanilla extract.
    5. Using a slotted spoon, transfer the candied rinds to a wire rack over a baking sheet to drain and cool.
    6. Once cooled, the candy can be rolled in additional sugar if desired. Let them dry completely.
    7. Store in an airtight container.
