- Ingredients:
- 4 cups watermelon rind, white part only, peeled and diced
- 1 1/2 cups granulated sugar
- 1 cup water
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/2 teaspoon vanilla extract
- Zest of one lemon
- Optional: pinch of salt
Directions:
- Prepare the watermelon rind by removing the outer green skin and any pink flesh. Cut the white part into small, uniform pieces.
- In a medium saucepan, combine sugar, water, ground ginger, ground cloves, and optional salt. Bring to a boil, stirring until the sugar dissolves.
- Add the diced watermelon rind and lemon zest to the boiling syrup. Reduce heat and simmer for about 45 minutes or until the rinds are translucent and tender.
- Remove from heat and stir in vanilla extract.
- Using a slotted spoon, transfer the candied rinds to a wire rack over a baking sheet to drain and cool.
- Once cooled, the candy can be rolled in additional sugar if desired. Let them dry completely.
- Store in an airtight container.
