Walking Taco Casserole

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 3 cups Fritos corn chips, divided
  • 2 cups shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped green onions
  • Sour cream and salsa for serving

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the taco seasoning mix and water to the skillet. Stir to combine and simmer for 5 minutes.
  4. Stir in the black beans and diced tomatoes with green chilies. Cook for an additional 2-3 minutes until heated through.
  5. In a greased 9×13-inch baking dish, spread half of the Fritos corn chips in an even layer.
  6. Pour the beef mixture over the chips, spreading it out evenly. Sprinkle with 1 cup of shredded cheddar cheese.
  7. Top with the remaining Fritos and the rest of the shredded cheddar cheese.
  8. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for a few minutes. Top with shredded lettuce, diced tomatoes, sliced black olives, and chopped green onions.
  10. Serve with sour cream and salsa on the side.
