Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies (Rotel)
- 3 cups Fritos corn chips, divided
- 2 cups shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup chopped green onions
- Sour cream and salsa for serving
Directions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the taco seasoning mix and water to the skillet. Stir to combine and simmer for 5 minutes.
- Stir in the black beans and diced tomatoes with green chilies. Cook for an additional 2-3 minutes until heated through.
- In a greased 9×13-inch baking dish, spread half of the Fritos corn chips in an even layer.
- Pour the beef mixture over the chips, spreading it out evenly. Sprinkle with 1 cup of shredded cheddar cheese.
- Top with the remaining Fritos and the rest of the shredded cheddar cheese.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Top with shredded lettuce, diced tomatoes, sliced black olives, and chopped green onions.
- Serve with sour cream and salsa on the side.
