Walking Taco Bake

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups corn chips (like Fritos), crushed
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced onion
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/2 cup salsa

Directions:

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the taco seasoning mix and water to the skillet. Stir to combine and simmer for 5 minutes.
  4. Stir in the black beans and diced tomatoes with green chilies. Cook for an additional 2-3 minutes until heated through.
  5. Spread a layer of crushed corn chips in the bottom of a greased 9×13-inch baking dish.
  6. Spoon the beef mixture over the corn chips, spreading it evenly.
  7. Top with shredded cheddar
