Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups corn chips (like Fritos), crushed
- 2 cups shredded cheddar cheese
- 1/2 cup diced onion
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup sour cream
- 1/2 cup salsa
Directions:
- Preheat oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the taco seasoning mix and water to the skillet. Stir to combine and simmer for 5 minutes.
- Stir in the black beans and diced tomatoes with green chilies. Cook for an additional 2-3 minutes until heated through.
- Spread a layer of crushed corn chips in the bottom of a greased 9×13-inch baking dish.
- Spoon the beef mixture over the corn chips, spreading it evenly.
- Top with shredded cheddar
