  1. Ingredients:
    • 1 head of romaine lettuce, chopped
    • 1 cup baby spinach, chopped
    • 1/2 cup fresh basil leaves
    • 1/2 cup fresh parsley leaves
    • 1/4 cup fresh chives
    • 1 avocado, diced
    • 1 cucumber, diced
    • 1/4 cup green onions, sliced
    • 1/4 cup pine nuts, toasted
    • 1/2 cup crumbled feta cheese
    • 1/2 cup plain Greek yogurt
    • 2 tablespoons olive oil
    • 2 tablespoons fresh lemon juice
    • 1 clove garlic, minced
    • Salt and pepper to taste
    Directions:
    1. In a large salad bowl, combine the chopped romaine lettuce, baby spinach, fresh basil, parsley, and chives.
    2. Add the diced avocado, cucumber, and sliced green onions to the bowl.
    3. In a small bowl, whisk together the Greek yogurt, olive oil, fresh lemon juice, minced garlic, salt, and pepper until smooth.
