Ingredients:
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 5 large egg yolks
- 3 cups whole milk
- 1 teaspoon vanilla extract
- 1 box vanilla wafer cookies
- 4-5 ripe bananas, sliced
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
Directions:
- In a medium saucepan, whisk together the sugar, flour, and salt. Add the egg yolks and milk, whisking until well combined.
- Cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon (about 10-12 minutes). Remove from heat and stir in the vanilla extract. Let it cool slightly.
- In a large glass dish or trifle bowl, layer the vanilla wafer cookies, banana slices, and pudding mixture. Repeat the layers until all ingredients are used, ending with a layer of pudding.
- In a separate bowl, beat the heavy whipping cream and powdered sugar together until stiff peaks form. Spread the whipped cream over the top layer of pudding.
- Refrigerate for at least 4 hours or overnight to allow the flavors to meld together.
