Directions:
- Preheat your oven to 375°F (190°C).
- Using a sharp knife, create a pocket in each chicken breast by slicing along one side.
- In a bowl, mix together the spinach, cream cheese, Parmesan cheese, garlic, Italian herbs, salt, and pepper.
- Spoon the spinach mixture into each chicken breast pocket.
- Secure the pockets with toothpicks to prevent the stuffing from falling out.
- Heat olive oil in a skillet over medium heat and sear the chicken breasts on each side until golden, about 3-4 minutes per side.
- Transfer the chicken breasts to a baking dish and bake in the oven for 20-25 minutes, or until the chicken is cooked through and no longer pink inside.
