Spinach Stuffed Chicken Breasts

  1. Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, create a pocket in each chicken breast by slicing along one side.
  3. In a bowl, mix together the spinach, cream cheese, Parmesan cheese, garlic, Italian herbs, salt, and pepper.
  4. Spoon the spinach mixture into each chicken breast pocket.
  5. Secure the pockets with toothpicks to prevent the stuffing from falling out.
  6. Heat olive oil in a skillet over medium heat and sear the chicken breasts on each side until golden, about 3-4 minutes per side.
  7. Transfer the chicken breasts to a baking dish and bake in the oven for 20-25 minutes, or until the chicken is cooked through and no longer pink inside.
