Spanish Rice and Beef Casserole


  • 1 box Rice-A-Roni Spanish Rice
  • 1 lb lean ground beef
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup shredded sharp cheddar cheese (plus extra for topping)
  • 1 can Rotel tomatoes and green chilies
  • Salt, pepper, and cumin to taste


  1. Prepare the Rice-A-Roni Spanish Rice according to the package directions. Set aside.
  2. In a large skillet, brown the ground beef over medium heat. Add the chopped onion, red bell pepper, and green bell pepper. Cook until the vegetables are tender and the beef is fully cooked, about 7-10 minutes.
  3. Add a sprinkle of shredded cheese, the can of Rotel, and season with salt, pepper, and cumin to taste. Stir to combine.
  4. Add the prepared Spanish rice to the skillet and mix everything together thoroughly.
  5. Pour the mixture into a greased baking dish and top with additional shredded sharp cheddar cheese.
  6. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Let the casserole rest for a few minutes before serving.
