Ingredients:
- 4 large baking potatoes
- 1 cup sour cream
- 1/4 cup chives, finely chopped
- 2 tablespoons butter, softened
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese (optional)
- Paprika for garnish (optional)
Directions:
- Preheat oven to 400°F (200°C).
- Wash and scrub the potatoes thoroughly. Pierce each potato several times with a fork to allow steam to escape during baking.
- Place the potatoes directly on the middle oven rack and bake for about 1 hour, or until tender when pierced with a fork.
- Remove the potatoes from the oven. When cool enough to handle, slice each potato lengthwise and scoop out the insides into a bowl, leaving a thin shell.
- To the potato insides, add sour cream, chives, butter, salt, and pepper. Mash until smooth. Stir in shredded cheddar cheese if using.
- Spoon the mixture back into the potato shells. Sprinkle with paprika if desired.
- Return the potatoes to the oven and bake for an additional 15-20 minutes, or until heated through and slightly crispy on top.
- Serve hot.
