- Ingredients:
- 1 pound ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro (optional)
- Tortilla chips for serving
Directions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the black beans, corn, diced tomatoes with green chilies, and taco seasoning to the skillet. Stir to combine and cook for 2-3 minutes until heated through.
- Spread the beef mixture evenly in a baking dish.
- In a medium bowl, combine the shredded cheddar and Monterey Jack cheeses.
- Sprinkle the cheese mixture evenly over the beef mixture.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly.
- Top with sour cream, chopped green onions, and cilantro if using.
- Serve with tortilla chips and enjoy!
