Smoky Baked Cowboy Dip

  1. Ingredients:
    • 1 pound ground beef
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 can (15 oz) corn, drained
    • 1 can (10 oz) diced tomatoes with green chilies, undrained
    • 1 packet taco seasoning
    • 1 cup shredded cheddar cheese
    • 1 cup shredded Monterey Jack cheese
    • 1/2 cup sour cream
    • 1/4 cup chopped green onions
    • 1/4 cup chopped cilantro (optional)
    • Tortilla chips for serving

    Directions:

    1. Preheat the oven to 375°F (190°C).
    2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
    3. Add the black beans, corn, diced tomatoes with green chilies, and taco seasoning to the skillet. Stir to combine and cook for 2-3 minutes until heated through.
    4. Spread the beef mixture evenly in a baking dish.
    5. In a medium bowl, combine the shredded cheddar and Monterey Jack cheeses.
    6. Sprinkle the cheese mixture evenly over the beef mixture.
    7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
    8. Remove from the oven and let cool slightly.
    9. Top with sour cream, chopped green onions, and cilantro if using.
    10. Serve with tortilla chips and enjoy!
