Ingredients:
- 8 oz cream cheese, softened
- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 1/2 cup fruit preserves (apricot, raspberry, or your favorite)
- Powdered sugar for dusting
Directions:
- In a large bowl, cream together the softened cream cheese and butter until smooth and fluffy.
- Gradually add in the flour, mixing until a soft dough forms.
- Divide the dough into two equal parts, flatten each part into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out one disk of dough to about 1/8-inch thickness. Cut into 2-inch squares.
- Place a small dollop of fruit preserves in the center of each square.
- Fold opposite corners of each square over the filling, pressing lightly to seal.
- Place the kolacky on the prepared baking sheet, about 1 inch apart.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Remove from the oven and transfer to a wire rack to cool completely.
- Dust with powdered sugar before serving.
