Simple and Delicious Kolacky

Ingredients:

  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1/2 cup fruit preserves (apricot, raspberry, or your favorite)
  • Powdered sugar for dusting

Directions:

  1. In a large bowl, cream together the softened cream cheese and butter until smooth and fluffy.
  2. Gradually add in the flour, mixing until a soft dough forms.
  3. Divide the dough into two equal parts, flatten each part into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  4. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. On a lightly floured surface, roll out one disk of dough to about 1/8-inch thickness. Cut into 2-inch squares.
  6. Place a small dollop of fruit preserves in the center of each square.
  7. Fold opposite corners of each square over the filling, pressing lightly to seal.
  8. Place the kolacky on the prepared baking sheet, about 1 inch apart.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  10. Remove from the oven and transfer to a wire rack to cool completely.
  11. Dust with powdered sugar before serving.
