Reese’s Butterfinger Cheesecake Bars

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup Reese’s peanut butter cups, chopped
  • 1 cup Butterfinger candy bars, chopped
  • 1/2 cup semi-sweet chocolate chips, melted (optional for drizzle)

Directions:

  1. Preheat your oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, mix the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter until combined. Press the mixture firmly into the bottom of the prepared baking pan.
  3. In a large mixing bowl, beat the cream cheese and 1 cup granulated sugar together until smooth. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Fold in the chopped Reese’s peanut butter cups and Butterfinger candy bars.
  5. Pour the cream cheese mixture over the crust and spread evenly.
  6. Bake for 35-40 minutes, or until the center is set and the edges are lightly browned.
  7. Allow the bars to cool completely in the pan on a wire rack. Once cooled, lift the bars out of the pan using the parchment paper overhang and cut into squares.
  8. Drizzle with melted chocolate if desired. Store in the refrigerator.
