Ingredients:
- 1 cup fresh raspberries
- 1/2 cup raspberry jam
- 1 1/2 cups mascarpone cheese
- 1 cup heavy cream
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 24 ladyfingers
- 1/2 cup strong brewed coffee, cooled
- 1/4 cup coffee liqueur (optional)
- Cocoa powder for dusting
- Additional raspberries for garnish
Directions:
- In a bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.
- Gently fold the mascarpone into the whipped cream until well combined.
- In another bowl, blend the raspberry jam with 2 tablespoons of water to thin it out slightly.
- Quickly dip each ladyfinger into the mixture of brewed coffee and coffee liqueur, ensuring they are not overly soaked.
- Arrange a layer of soaked ladyfingers at the bottom of a rectangular serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Dot with half of the raspberry jam mixture and sprinkle with fresh raspberries.
- Repeat the layering with the remaining ladyfingers, mascarpone, jam, and raspberries.
- Cover and chill in the refrigerator for at least 4 hours, or overnight.
- Before serving, dust the top with cocoa powder and garnish with fresh raspberries.
